Every 4-5 weeks I spend a Saturday in the kitchen cooking and then poof- my freezer has a months worth of meals!
When Case was born my neighbor made us this delicious Fall Casserole! I'm not sure where her recipe came from but here is my take- (it is delicious and YES, even my girls ate it!)
Fall Casserole:
Package of vermicelli noodles
1 pound ground chuck
1 onion chopped
1 tsp minced garlic
8 ounces fresh mushrooms, sliced
1 small jar of chopped green olives
1 (10oz) can tomato purée
1/2 tsp House Seasoning (from Paula Deen)
2 cups shredded sharp cheddar
Preheat oven to 350
Cook pasta. Brown and drain ground beef with onion and garlic, drain.
Stir in mushrooms and olives, simmer for 3 minutes, stirring frequently.
Mix tomato purée with 11/2 cups of water and add to beef mixture
Season to taste and stir in 11/2 cups of cheese
Pour mixture in to two 8x8 aluminum pans
Sprinkle with remaining cheese.
Cover with Press n Seal and put in freezer bag. Freeze.
Thaw- and cook 350 for 30 min!!

I love doing this!!
It saves me a ton of money and a ton of time!!!
